{"id":458,"date":"2013-07-17T19:42:55","date_gmt":"2013-07-18T00:42:55","guid":{"rendered":"http:\/\/wordsfromthehomefront.com\/?p=458"},"modified":"2016-11-02T19:45:18","modified_gmt":"2016-11-03T00:45:18","slug":"blueberry-muffins-or-bread-and-more","status":"publish","type":"post","link":"https:\/\/wordsfromthehomefront.com\/index.php\/2013\/07\/17\/blueberry-muffins-or-bread-and-more\/","title":{"rendered":"Blueberry Muffins or Bread {and more}"},"content":{"rendered":"<p><span style=\"color: #d11010; font-size: 18pt;\"><strong><span style=\"font-family: arial, helvetica, sans-serif;\">Blueberry Muffins\/Bread<\/span><\/strong><\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 12pt;\">Ingredients:<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 12pt;\">2 cups pastry flour or 1 3\/4 cups all-purpose flour\u00a0<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 12pt;\">3 teaspoons baking powder<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 12pt;\">1\/2 teaspoon salt<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 12pt;\">\u00a01\/2 cup sugar<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 12pt;\">1 or 2 eggs\u00a0<em>(1 for muffins; 2 for bread)<\/em><\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 12pt;\">1 cup milk<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 12pt;\">1\/4 cup melted butter<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 12pt;\">1 cup fresh or frozen blueberries.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 12pt;\">\u00a0<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 12pt;\">Instructions:<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 12pt;\">Place rinsed and drained blueberries in a small bowl. Sprinkle 1\/4 cup of the flour over berries and set aside. \u00a0<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 12pt;\">Sift remaining flour and other dry ingredients together into a large mixing bowl. \u00a0In another bowl, beat egg(s) and milk together well then pour in melted butter while stirring. Then pour the liquid mixture over the dry mixture stirring only enough to dampen the flour. Dump the berries in and fold into the mixture.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 12pt;\">\u00a0<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 12pt;\"><strong>For Muffins:<\/strong><\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 12pt;\">Fill muffin cups 2\/3 full and Bake at 400 degrees Farenheit for 15-20 minutes- until browned on top- they usually will crack open on top as well.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 12pt;\"><strong>For Bread:<\/strong>\u00a0<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 12pt;\">Pour mixture into a well-buttered bundt pan and bake approximately 30 minutes at 400 degrees farenheit. Test for donness with toothpick. \u00a0When done, remove from oven, let sit 5-10 minutes in pan then turn out onto rack to cool. Once plated sprinkle the top (lightly) with superfine or caster sugar.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 12pt;\">\u00a0<\/span><\/p>\n<p><strong><span style=\"font-family: arial, helvetica, sans-serif; font-size: 12pt;\">This recipe can be used to make other types of muffins:<\/span><\/strong><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 12pt;\"><em>Bacon Muffins<\/em>: \u00a0leave out the berries. Use bacon drippings in place of butter, reduce sugar amount to 2 tablespoons and add 3 tablespoons cooked and crumbled bacon to batter.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 12pt;\"><em>Other Berry Muffins:\u00a0<\/em>use 1 cup any type of berries, fresh or frozen, well rinsed.\u00a0<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 12pt;\"><em>Date or raisin Muffins:<\/em>\u00a0add 1\/2 cup chopped dates or 1\/4 cup raisins instead of berries.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 12pt;\"><em>Pecan Muffins:<\/em>\u00a0Reduce amount of sugar to 1\/4 cup. Add 1\/2 cup chopped pecans to batter. After filling muffin cups, sprinkle with a little sugar, cinnamon, and more nuts(finely chop these).<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 12pt;\"><em>Whole Wheat Muffins:<\/em>\u00a0substitute 3\/4 cup coarse whole wheat flour for 1 cup of the all-purpose flour. DO NOT SIFT IN WITH OTHER DRY INGREDIENTS. Add to dry ingredients after sifting.
